Fresh Mozzarella:

Made fresh daily, Fiore di Nonno’s small batch mozzarella tastes like a refreshing glass of milk. It is a high moisture cheese, soft in texture, milky sweet in flavor with a hint of salt. Fresh mozzarella is the signature product of Fiore di Nonno in the tradition of Lourdes’s grandfather and the generations before him. It is made from cow’s milk.

String cheese is fresh mozzarella that has been stretched and braided to remove some of the moisture, leaving the same fresh taste with a stringy texture. Course sea salt and black nigella seeds accent complete it’s distinctive flavor.

Scamorza (Winter only):

Scamorza is a low moisture mozzarella cheese that is firm in texture, has a dry, salty exterior and a wonderfully smooth interior. It’s perfect for melting applications. To make scamorza, fresh mozzarella cheese is repeatedly wrung out to expel excess whey before shaping. It is then brined in a heavy salt water solution for several hours and then hung to dry for 3 to 5 days in a temperature controlled environment.

Burrata:

Burrata originates from a particular area of Italy’s Apulia region, called Murgia. It consists of a disk of fresh mozzarella shaped into a pouch and is stuffed with a mixture of mozzarella curds and fresh cream. Lourdes has created her own adaptation of the old recipe, pairing the modern with the traditional by mixing the tastes of sweet, savory, and tangy with the richness of mascarpone. The result is a slightly salty milky mozzarella shell encasing a creamy burst of carefully balanced flavors.

Mascarpone:

Fiore di Nonno’s burrata is filled with Italian mascarpone and a dab of creamy Greek yogurt. Mascarpone lends a rich, sweet butter flavor, while Greek yogurt adds the right amount of tang to compliment the surrounding fresh mozzarella.

Fiore di Nonno’s Fig burrata is filled with Italian mascarpone, a dab of creamy Greek yogurt, and sweet Turkish fig jam.

Roasted Garlic and Onion:

Fiore di Nonno’s Roasted Garlic and Onion burrata is filled with Italian mascarpone, a bit of labne ( a rich kefir cheese) and Stonewall Kitchen's slightly sweet Roasted Garlic and Onion jam

Za’atar:

Fiore di Nonno’s Za’atar burrata is filled with mascarpone, labne and za’atar, a Middle Eastern herb mixture.
